Recipe of the Week – Strawberry Limeade Protein Bars

Strawberry season has finally begun, which means you can add a nice fruity taste to your favorite healthy recipes. Strawberries are packed with vitamins, fiber, and very high levels of antioxidants, making it the perfect pre or after a work-out snack. Some of the health benefits that come from strawberries are healthy eyes, an immunity, and brain function boost, improved heart function, and a improved metabolism. Strawberry Limeade is a classic refreshing summer drink and this recipe is a great savory version of the classic taste combination and filled with healthy ingredients to start out your day. So without further or due, let’s start cooking!

Ingredients:

Crust:
– 32 grams of vanilla protein powder
– 65 grams of oat flour
– 32 grams of almond meal flour
– 60 milliliters of melted coconut oil

Filling:
– 64 grams of vanilla protein powder
– 120 milliliters of lime juice
– 32 grams of Xylitol
– 2 eggs
– 75 grams of sliced strawberries

Instructions:

1. Preheat oven to 350 degrees F. Spray an 8×8” baking dish with non-stick spray and set aside.

2. Combine all the crust ingredients, except for the coconut oil, into a mixing bowl.

3. Pour the coconut oil in with the crust ingredients and stir until well combined. It should become crumbly.  Spoon the crust mixture into baking dish. Press down the mixture using your fingers until it completely covers the bottom of the dish.

4. Bake crust in the oven for 10 minutes. Remove from oven and cool whilst making the bar filling.

5. Add all the filling ingredients, except for the strawberries, into a blender or food processor. Blend mixture until smooth. Pour filling mixture on top of the cooled crust.

6. Evenly place sliced strawberries on top of the filling.

7. Return dish to the oven and bake for an additional 18-24 minutes. Let cool in the fridge for at least 3 hours. Slice into 16 squares. Enjoy!
